My good friend Oliver cooked this for me, and has kindly supplied the recipe. It’s modified from a BBC Good Food recipe called One Pan Spicy Rice to reduce the salt content.

Modifications
Though the recipe is itself not terribly salty, a few changes to the ingredients can be made to reduce it even further.
- Use a low salt curry paste of your choice or, if you’re a confident cook you could always make your own! The Curry pastes with the lowest salt content that I have found are from Waitrose Cooks Ingredients range such as this Balti paste.
- Similarly with the stock either use a low salt stock cube such as this one from Kallo. Alternatively if you are being really strict, simply use water, as Oliver did.
- Rather than frozen spinach, Oliver used fresh. I’m not sure it makes much difference to the salt content, though!
